Avocado Toast with Fried Eggs

Avocado toast with eggs has become a breakfast staple for good reason — it's genuinely delicious, nutritious, and endlessly customizable. Creamy mashed avocado seasoned with lemon and a touch of garlic is spread over crispy toasted sourdough, then topped with your egg of choice. A fried egg with a runny yolk is the classic. Add cherry tomatoes, microgreens, or a sprinkle of everything bagel seasoning to take it further.
Ingredients
- 4 slices thick sourdough or whole-grain bread, toasted
- 2 ripe avocados
- Juice of 1 lemon or lime
- 1/4 tsp garlic powder
- Salt and red pepper flakes to taste
- 4 eggs
Optional Toppings
- Cherry tomatoes, halved
- Microgreens or arugula
- Everything bagel seasoning
- Crumbled feta cheese
- Flaky sea salt
Instructions
- Toast bread to desired level of crispiness
- Halve, pit, and scoop avocado into a bowl
- Add lemon juice, garlic powder, and a pinch of salt; mash to desired texture
- Fry eggs in butter over medium heat 2-3 minutes for a runny yolk, or cook to preference
- Spread avocado mash generously onto toast
- Top with a fried egg
- Finish with red pepper flakes, flaky sea salt, and any optional toppings
Notes
Use ripe avocados — they should yield to gentle pressure but not feel mushy. Season assertively with salt; avocado needs it.
