Avocado toast with eggs has become a breakfast staple for good reason — it's genuinely delicious, nutritious, and endlessly customizable. Creamy mashed avocado seasoned with lemon and a touch of garlic is spread over crispy toasted sourdough, then topped with your egg of choice. A fried egg with a runny yolk is the classic. Add cherry tomatoes, microgreens, or a sprinkle of everything bagel seasoning to take it further.

Ingredients

  • 4 slices thick sourdough or whole-grain bread, toasted
  • 2 ripe avocados
  • Juice of 1 lemon or lime
  • 1/4 tsp garlic powder
  • Salt and red pepper flakes to taste
  • 4 eggs

Optional Toppings

  • Cherry tomatoes, halved
  • Microgreens or arugula
  • Everything bagel seasoning
  • Crumbled feta cheese
  • Flaky sea salt

Instructions

  1. Toast bread to desired level of crispiness
  2. Halve, pit, and scoop avocado into a bowl
  3. Add lemon juice, garlic powder, and a pinch of salt; mash to desired texture
  4. Fry eggs in butter over medium heat 2-3 minutes for a runny yolk, or cook to preference
  5. Spread avocado mash generously onto toast
  6. Top with a fried egg
  7. Finish with red pepper flakes, flaky sea salt, and any optional toppings

Notes

Use ripe avocados — they should yield to gentle pressure but not feel mushy. Season assertively with salt; avocado needs it.
