Quick Breakfast Burrito Bowls
Protein-packed breakfast ready in 15 minutes
Ingredients
- 8 eggs
- 1 lb breakfast sausage
- 1 cup canned black beans, drained
- 1 cup shredded cheese
- 1 cup salsa
- 1 avocado, diced
- 2 tbsp butter
- Salt and pepper to taste
- Optional: sour cream, hot sauce
Instructions
- Cook sausage in large skillet over medium heat until browned, breaking into crumbles
- Remove sausage and drain excess fat
- Beat eggs with salt and pepper
- Melt butter in same skillet over medium-low heat
- Pour in eggs and scramble until just set
- Warm black beans in microwave
- Divide eggs, sausage, and beans into bowls
- Top each with cheese, salsa, and avocado
