Quick Breakfast Burrito Bowls

Protein-packed breakfast ready in 15 minutes

Ingredients

  • 8 eggs
  • 1 lb breakfast sausage
  • 1 cup canned black beans, drained
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 avocado, diced
  • 2 tbsp butter
  • Salt and pepper to taste
  • Optional: sour cream, hot sauce

Instructions

  1. Cook sausage in large skillet over medium heat until browned, breaking into crumbles
  2. Remove sausage and drain excess fat
  3. Beat eggs with salt and pepper
  4. Melt butter in same skillet over medium-low heat
  5. Pour in eggs and scramble until just set
  6. Warm black beans in microwave
  7. Divide eggs, sausage, and beans into bowls
  8. Top each with cheese, salsa, and avocado
