Blueberry Banana Overnight Oats

Overnight oats are the ultimate meal-prep breakfast for busy mornings — spend two minutes at night and wake up to a creamy, ready-to-eat meal with zero morning effort. Greek yogurt and chia seeds add protein and help thicken the oats overnight into a pudding-like texture. Mashed banana naturally sweetens the base while adding creaminess, and fresh blueberries burst with flavor.
Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup plain Greek yogurt
- 1 tbsp chia seeds
- 1 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1 ripe banana (half mashed in, half sliced for topping)
- 1/2 cup fresh or frozen blueberries
Instructions
- In a jar or container with a lid, combine oats, milk, Greek yogurt, chia seeds, honey, and vanilla
- Mash half the banana and stir into the oat mixture
- Stir everything well to combine
- Top with remaining banana slices and blueberries
- Seal and refrigerate overnight (minimum 6 hours, up to 3 days)
- In the morning, stir well and add a splash of milk if too thick
- Eat cold or microwave 1-2 minutes for a warm version
Notes
Old-fashioned rolled oats work best — quick oats get too mushy overnight. If the oats are too thick in the morning, stir in a splash of milk.
