Cajun Shrimp and Rice

This Cajun shrimp and rice is a one-pan weeknight powerhouse: bold seasoning, juicy shrimp, and perfectly cooked rice all come together in a single skillet. Inspired by the flavors of Louisiana cooking, diced peppers and onion form the aromatic base, and everything simmers together in spiced chicken broth until the rice is fluffy and fragrant. The shrimp cook right on top at the end, picking up all that Cajun flavor in just a few minutes.
Ingredients
- 1.5 lbs large shrimp, peeled and deveined
- 1.5 cups long-grain white rice
- 3 cups chicken broth
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tbsp Cajun seasoning, divided
- 2 tbsp olive oil
- 1 tbsp butter
- Salt to taste
- Green onions for garnish
- Hot sauce for serving
Instructions
- Heat olive oil in large deep skillet over medium-high heat
- Add peppers and onion; cook 5 minutes until softened
- Add garlic; cook 1 minute
- Stir in rice, broth, diced tomatoes, and 1.5 tbsp Cajun seasoning
- Bring to boil, reduce heat to low, cover and cook 18-20 minutes until rice is done
- Toss shrimp with remaining Cajun seasoning and a pinch of salt
- Make a well in center of rice; add butter and shrimp
- Cook shrimp 2 minutes per side until pink
- Stir everything together, taste for seasoning
- Top with green onions and serve with hot sauce
Notes
Cajun seasoning varies in saltiness between brands — taste before adding extra salt. If your shrimp are large, they may need an extra minute per side.
