One-Pan Garlic Butter Chicken and Vegetables

Everything cooks together in one pan for easy cleanup
Ingredients
- 4 chicken thighs
- 3 cups mixed vegetables (broccoli, bell peppers, zucchini)
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F
- Season chicken with salt, pepper, paprika, and Italian seasoning
- Heat olive oil in large oven-safe skillet over medium-high heat
- Sear chicken skin-side down for 5 minutes until golden
- Flip chicken and add vegetables around it
- Dot butter over vegetables and sprinkle with minced garlic
- Transfer skillet to oven and bake 15-20 minutes until chicken reaches 165°F
- Let rest 5 minutes before serving
Notes
Use frozen vegetables to save even more time
