One-Pan Garlic Butter Chicken and Vegetables

Everything cooks together in one pan for easy cleanup

Ingredients

  • 4 chicken thighs
  • 3 cups mixed vegetables (broccoli, bell peppers, zucchini)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F
  2. Season chicken with salt, pepper, paprika, and Italian seasoning
  3. Heat olive oil in large oven-safe skillet over medium-high heat
  4. Sear chicken skin-side down for 5 minutes until golden
  5. Flip chicken and add vegetables around it
  6. Dot butter over vegetables and sprinkle with minced garlic
  7. Transfer skillet to oven and bake 15-20 minutes until chicken reaches 165°F
  8. Let rest 5 minutes before serving

Notes

Use frozen vegetables to save even more time
