Classic meatloaf is the ultimate comfort food that never goes out of style. This version uses a combination of ground beef, breadcrumbs, and aromatics held together with eggs and Worcestershire sauce for savory depth. The real star is the tangy-sweet ketchup glaze that caramelizes during baking and creates an irresistible crust. Soaking the breadcrumbs in milk keeps the loaf moist all the way through. Ingredients
Meatloaf
- 2 lbs ground beef (80/20)
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 2 eggs
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
Ketchup Glaze
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp Worcestershire sauce
Instructions
- Preheat oven to 350°F
- Soak breadcrumbs in milk in large bowl for 2 minutes
- Add eggs, onion, garlic, Worcestershire, Italian seasoning, salt, and pepper; mix well
- Add ground beef and mix with hands until just combined — do not overwork
- Press mixture into a 9x5 loaf pan or shape into loaf on rimmed baking sheet
- Mix glaze ingredients together
- Spread half the glaze over the meatloaf
- Bake 45 minutes, then spread remaining glaze on top
- Bake another 15 minutes until internal temperature reaches 160°F
- Let rest 10 minutes before slicing
Notes
Don't overmix the meat — it makes the loaf dense and tough. Mix just until everything is combined. Let it rest 10 minutes before slicing so it holds together.
