BLT Pasta Salad
No Image
BLT pasta salad is everything you love about a BLT sandwich — salty bacon, juicy tomatoes, crisp lettuce — tossed with pasta in a tangy, creamy dressing. It's the ideal potluck dish, summer cookout side, or make-ahead lunch that disappears fast wherever it's served. The dressing comes together with mayo, sour cream, and lemon for a lighter, brighter result than a heavy mayonnaise-only salad. The key to keeping it fresh is adding the lettuce right before serving so it stays crisp.
Ingredients
- 12 oz rotini or bow tie pasta
- 1 lb bacon, cooked crispy and crumbled
- 2 cups cherry tomatoes, halved
- 2 cups romaine lettuce or baby spinach, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried dill
- Salt and pepper to taste
Instructions
- Cook pasta in salted water until al dente; drain and rinse under cold water
- Mix mayonnaise, sour cream, lemon juice, garlic powder, and dill in large bowl
- Add cooled pasta to dressing and toss to coat
- Add crumbled bacon and cherry tomatoes; toss gently
- Refrigerate 30 minutes for best flavor
- Right before serving, fold in the chopped lettuce
- Season with salt and pepper and serve
Notes
Add the chopped lettuce right before serving — if it sits in the dressing it wilts. Extra-crispy bacon is important for texture; cook it a bit longer than you normally would.
