Garlic Butter Steak Bites

Garlic butter steak bites are the fastest way to get a steakhouse-quality dinner on the table. Bite-sized pieces of sirloin are seared in a screaming-hot pan for a deep crust, then tossed in a golden garlic and herb butter that perfumes the whole kitchen. The key is patting the steak completely dry and using a very hot pan — that's the only way to get the crust that makes these irresistible.
Ingredients
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 5 tbsp butter
- 5 cloves garlic, minced
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Mashed potatoes or egg noodles for serving
Instructions
- Pat steak pieces very dry with paper towels — critical for a good sear
- Season generously with salt and pepper
- Heat large cast-iron or heavy skillet over high heat until smoking hot
- Add 1 tbsp butter and let it melt
- Add steak bites in single layer — cook in batches if needed to avoid crowding
- Sear 1-2 minutes per side for medium-rare; remove to plate
- Reduce heat to medium; add remaining butter, garlic, thyme, and rosemary
- Cook garlic 1 minute, stirring, until fragrant and butter turns golden
- Return steak bites to pan and toss in garlic butter for 30 seconds
- Garnish with parsley and serve immediately
Notes
Patting the steak completely dry with paper towels is non-negotiable for a good sear. Cook in batches if needed — a crowded pan leads to steaming, not searing.
