Simple fried rice using leftover rice and basic ingredients

Ingredients

  • 4 cups cooked rice, cooled
  • 3 eggs, beaten
  • 3 tbsp vegetable oil
  • 1 cup frozen peas and carrots
  • 3 green onions, chopped
  • 3 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. Heat 1 tbsp oil in large skillet over medium-high heat
  2. Scramble eggs, remove and set aside
  3. Add remaining oil, then rice to skillet
  4. Stir fry rice 3-4 minutes, breaking up clumps
  5. Add frozen vegetables and cook 2 minutes
  6. Return eggs to pan with soy sauce and sesame oil
  7. Garnish with green onions and serve

Notes

Day-old rice works best for this recipe
