Quick Fried Rice

Simple fried rice using leftover rice and basic ingredients
Ingredients
- 4 cups cooked rice, cooled
- 3 eggs, beaten
- 3 tbsp vegetable oil
- 1 cup frozen peas and carrots
- 3 green onions, chopped
- 3 tbsp soy sauce
- 1 tsp sesame oil
Instructions
- Heat 1 tbsp oil in large skillet over medium-high heat
- Scramble eggs, remove and set aside
- Add remaining oil, then rice to skillet
- Stir fry rice 3-4 minutes, breaking up clumps
- Add frozen vegetables and cook 2 minutes
- Return eggs to pan with soy sauce and sesame oil
- Garnish with green onions and serve
