Tender pan-seared chicken in a rich, creamy sun-dried tomato and parmesan sauce. This restaurant-quality dinner comes together in one skillet in 30 minutes — so good it's been said to inspire marriage proposals.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1 tsp red pepper flakes
- 2 tbsp fresh basil, chopped
Instructions
- Pat chicken breasts dry and season both sides generously with garlic powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium. Add garlic and sun-dried tomatoes to the same skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until slightly thickened.
- Add parmesan and red pepper flakes, stirring until cheese is melted and sauce is smooth.
- Return chicken to the skillet and spoon sauce over the top. Simmer on low for 5-7 minutes until chicken is cooked through (165°F internal temp).
- Garnish with fresh basil and serve immediately with pasta, rice, or crusty bread.
Notes
Bone-in thighs also work great but will need 5-7 extra minutes. Don't skip deglazing the pan — those browned bits are flavor gold. Serve with crusty bread, pasta, or rice to soak up the sauce.
