Tender pan-seared chicken in a rich, creamy sun-dried tomato and parmesan sauce. This restaurant-quality dinner comes together in one skillet in 30 minutes — so good it's been said to inspire marriage proposals.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp red pepper flakes
  • 2 tbsp fresh basil, chopped

Instructions

  1. Pat chicken breasts dry and season both sides generously with garlic powder, Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  3. Reduce heat to medium. Add garlic and sun-dried tomatoes to the same skillet and cook for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
  5. Stir in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until slightly thickened.
  6. Add parmesan and red pepper flakes, stirring until cheese is melted and sauce is smooth.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer on low for 5-7 minutes until chicken is cooked through (165°F internal temp).
  8. Garnish with fresh basil and serve immediately with pasta, rice, or crusty bread.

Notes

Bone-in thighs also work great but will need 5-7 extra minutes. Don't skip deglazing the pan — those browned bits are flavor gold. Serve with crusty bread, pasta, or rice to soak up the sauce.
