Creamy Tuscan Pasta

Rich and creamy pasta ready faster than ordering takeout

Ingredients

  • 12 oz penne pasta
  • 2 cups cooked chicken, diced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions, reserve 1 cup pasta water
  2. While pasta cooks, heat oil in large skillet over medium heat
  3. Add garlic and cook 1 minute until fragrant
  4. Add cream, sun-dried tomatoes, and Italian seasoning
  5. Simmer 3-4 minutes until slightly thickened
  6. Stir in chicken, spinach, and parmesan
  7. Add drained pasta and toss, using pasta water to thin if needed
  8. Season with salt and pepper and serve immediately

Notes

Use rotisserie chicken to make it even quicker
