Creamy Tuscan Pasta
Rich and creamy pasta ready faster than ordering takeout
Ingredients
- 12 oz penne pasta
- 2 cups cooked chicken, diced
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions, reserve 1 cup pasta water
- While pasta cooks, heat oil in large skillet over medium heat
- Add garlic and cook 1 minute until fragrant
- Add cream, sun-dried tomatoes, and Italian seasoning
- Simmer 3-4 minutes until slightly thickened
- Stir in chicken, spinach, and parmesan
- Add drained pasta and toss, using pasta water to thin if needed
- Season with salt and pepper and serve immediately
Notes
Use rotisserie chicken to make it even quicker
