Mediterranean Chickpea Bowls
Light and fresh vegetarian bowls packed with protein
Ingredients
- 2 cans chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 4 cups mixed greens
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup hummus
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Heat olive oil in skillet over medium heat
- Add chickpeas, cumin, paprika, salt, and pepper
- Sauté 8-10 minutes until chickpeas are crispy
- Divide greens among four bowls
- Top each with tomatoes, cucumber, and red onion
- Add crispy chickpeas and crumbled feta
- Drizzle with lemon juice and add a dollop of hummus
- Toss before eating
