Mediterranean Chickpea Bowls

Light and fresh vegetarian bowls packed with protein

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups mixed greens
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup hummus
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in skillet over medium heat
  2. Add chickpeas, cumin, paprika, salt, and pepper
  3. Sauté 8-10 minutes until chickpeas are crispy
  4. Divide greens among four bowls
  5. Top each with tomatoes, cucumber, and red onion
  6. Add crispy chickpeas and crumbled feta
  7. Drizzle with lemon juice and add a dollop of hummus
  8. Toss before eating

Prep the vegetables ahead for an even quicker meal
