Simple Chicken Quesadillas

Crispy quesadillas with chicken and cheese
Ingredients
- 4 large flour tortillas
- 2 cups cooked chicken, shredded
- 2 cups Mexican cheese blend, shredded
- 1/2 cup salsa
- 2 tbsp butter
- Sour cream and guacamole for serving
Instructions
- Mix chicken with salsa in bowl
- Place chicken mixture and cheese on half of each tortilla
- Fold tortillas in half
- Heat butter in large skillet over medium heat
- Cook quesadillas 2-3 minutes per side until golden
- Cut into wedges and serve with sour cream
Notes
Use rotisserie chicken for even quicker prep
