Sheet Pan Chicken Fajitas
Hands-off fajitas that cook on one sheet pan
Ingredients
- 1.5 lbs chicken breasts, sliced into strips
- 3 bell peppers, sliced
- 1 large onion, sliced
- 3 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 flour tortillas
- Toppings: sour cream, cheese, salsa, avocado
Instructions
- Preheat oven to 425°F
- Mix chili powder, cumin, paprika, garlic powder, salt, and pepper
- Toss chicken strips with 2 tbsp oil and half the spice mix
- Toss peppers and onions with remaining oil and spices
- Spread everything on large sheet pan in single layer
- Roast 18-20 minutes, stirring halfway through
- Warm tortillas and serve with chicken mixture and toppings
Notes
Line the pan with foil for even easier cleanup
