Sheet Pan Chicken Fajitas

Hands-off fajitas that cook on one sheet pan

Ingredients

  • 1.5 lbs chicken breasts, sliced into strips
  • 3 bell peppers, sliced
  • 1 large onion, sliced
  • 3 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • Toppings: sour cream, cheese, salsa, avocado

Instructions

  1. Preheat oven to 425°F
  2. Mix chili powder, cumin, paprika, garlic powder, salt, and pepper
  3. Toss chicken strips with 2 tbsp oil and half the spice mix
  4. Toss peppers and onions with remaining oil and spices
  5. Spread everything on large sheet pan in single layer
  6. Roast 18-20 minutes, stirring halfway through
  7. Warm tortillas and serve with chicken mixture and toppings

Notes

Line the pan with foil for even easier cleanup
