Creamy Parmesan Mushroom Chicken

Chicken in a creamy sauce with mushrooms, garlic, and spinach.
Ingredients
- 1 pound chicken breast or boneless skinless thighs
- 6 ounces sliced mushroom
- 2 tablespoons olive oil
- 1/4 cup butter
- 2 garlic cloves
- 2 tablespoons flour
- 1/2 cup chicken broth
- 1/2 cup grated parmesan
- 1-2 cups spinach
Instructions
- In large pan, add olive oil and cook chicken. Remove chicken and set aside
- In the same pan, melt butter, then sautee garlic and mushrooms. Mix in flour, then add cream, chicken broth, and parmesan cheese.
- Simmer until thickened
- Add in spinach and cook until wilted
- Add chicken back in and warm back up for a couple minutes.
Notes
Serve over rice or pasta
