Colorful bell peppers filled with a savory mixture of seasoned ground turkey, rice, tomatoes, and melted cheese. A wholesome, complete dinner that's easy to customize, great for picky eaters, and made in one baking dish.

Ingredients

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground turkey
  • 1 cup cooked white rice
  • 1 can (14 oz) diced tomatoes, drained
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F. Place the hollowed bell peppers in a baking dish, cut-side up.
  2. Heat olive oil in a skillet over medium heat. Cook onion for 3-4 minutes until softened. Add garlic and cook 1 minute more.
  3. Add ground turkey and cook, breaking it up, until no longer pink, about 6-7 minutes. Drain any excess fat.
  4. Stir in diced tomatoes, cooked rice, Italian seasoning, garlic powder, paprika, salt, and pepper. Cook 2 minutes until heated through.
  5. Spoon the turkey mixture evenly into each pepper. Top each pepper with shredded cheese.
  6. Cover the dish with foil and bake for 25 minutes. Uncover and bake another 10-15 minutes until peppers are tender and cheese is bubbly and lightly browned.
  7. Garnish with fresh parsley and serve hot.

Notes

Use any color bell peppers — red and orange are sweeter. You can substitute ground beef or chicken. For a lower-carb version, swap the rice for cauliflower rice. Make ahead unbaked and refrigerate, then bake when ready.
