Ground Turkey Stuffed Bell Peppers

Colorful bell peppers filled with a savory mixture of seasoned ground turkey, rice, tomatoes, and melted cheese. A wholesome, complete dinner that's easy to customize, great for picky eaters, and made in one baking dish.
Ingredients
- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 lb ground turkey
- 1 cup cooked white rice
- 1 can (14 oz) diced tomatoes, drained
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F. Place the hollowed bell peppers in a baking dish, cut-side up.
- Heat olive oil in a skillet over medium heat. Cook onion for 3-4 minutes until softened. Add garlic and cook 1 minute more.
- Add ground turkey and cook, breaking it up, until no longer pink, about 6-7 minutes. Drain any excess fat.
- Stir in diced tomatoes, cooked rice, Italian seasoning, garlic powder, paprika, salt, and pepper. Cook 2 minutes until heated through.
- Spoon the turkey mixture evenly into each pepper. Top each pepper with shredded cheese.
- Cover the dish with foil and bake for 25 minutes. Uncover and bake another 10-15 minutes until peppers are tender and cheese is bubbly and lightly browned.
- Garnish with fresh parsley and serve hot.
Notes
Use any color bell peppers — red and orange are sweeter. You can substitute ground beef or chicken. For a lower-carb version, swap the rice for cauliflower rice. Make ahead unbaked and refrigerate, then bake when ready.
