20-Minute White Chicken Chili
Warm and comforting white chili using shortcuts
Ingredients
- 3 cups cooked chicken, shredded
- 2 cans white beans, drained
- 1 can diced green chiles
- 4 cups chicken broth
- 1 cup sour cream
- 1 onion, diced
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp oregano
- Salt and pepper to taste
- Toppings: cheese, cilantro, tortilla chips
Instructions
- Sauté onion in large pot with a drizzle of oil until softened, about 5 minutes
- Add cumin, garlic powder, and oregano, cook 1 minute
- Add chicken broth, beans, green chiles, and chicken
- Bring to simmer and cook 10 minutes
- Remove from heat and stir in sour cream
- Season with salt and pepper
- Serve topped with cheese, cilantro, and crushed tortilla chips
Notes
Use a rotisserie chicken and canned beans for speed
