20-Minute White Chicken Chili

Warm and comforting white chili using shortcuts

Ingredients

  • 3 cups cooked chicken, shredded
  • 2 cans white beans, drained
  • 1 can diced green chiles
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 onion, diced
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • Toppings: cheese, cilantro, tortilla chips

Instructions

  1. Sauté onion in large pot with a drizzle of oil until softened, about 5 minutes
  2. Add cumin, garlic powder, and oregano, cook 1 minute
  3. Add chicken broth, beans, green chiles, and chicken
  4. Bring to simmer and cook 10 minutes
  5. Remove from heat and stir in sour cream
  6. Season with salt and pepper
  7. Serve topped with cheese, cilantro, and crushed tortilla chips

Notes

Use a rotisserie chicken and canned beans for speed
