Greek Chicken Salad
Fresh and vibrant Greek salad topped with grilled chicken
Ingredients
- 2 chicken breasts
- 1 tbsp olive oil
- 6 cups romaine lettuce, chopped
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives
- 1/2 cup feta cheese, crumbled
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and oregano
- Heat oil in skillet over medium-high heat
- Cook chicken 6-7 minutes per side until cooked through
- Slice chicken and let rest while assembling salad
- Combine lettuce, cucumber, tomatoes, onion, and olives in large bowl
- Whisk together olive oil, lemon juice, oregano, salt, and pepper for dressing
- Toss salad with dressing
- Top with sliced chicken and crumbled feta
Notes
Use rotisserie chicken to skip the cooking step entirely
