Greek Chicken Salad

Fresh and vibrant Greek salad topped with grilled chicken

Ingredients

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 6 cups romaine lettuce, chopped
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, and oregano
  2. Heat oil in skillet over medium-high heat
  3. Cook chicken 6-7 minutes per side until cooked through
  4. Slice chicken and let rest while assembling salad
  5. Combine lettuce, cucumber, tomatoes, onion, and olives in large bowl
  6. Whisk together olive oil, lemon juice, oregano, salt, and pepper for dressing
  7. Toss salad with dressing
  8. Top with sliced chicken and crumbled feta

Notes

Use rotisserie chicken to skip the cooking step entirely
