Slow Roasted Beef Roast with Veggies

Slow roasted beef roast with potatoes, carrots, and onion.
Ingredients
- 3-4 pound beef chuck roast
- 3-4 russet potatoes
- 1 pound baby carrots
- 1 largely chopped onion
- 2-3 garlic cloves
- Salt, pepper
- 1 tablespoon rosemary
Instructions
- Optional: in a large, hot pan, sear each side of the roast for 1-2 minutes
- Chop onion and potatoes into large, 1-2 inch pieces
- Add beef, veggies, broth and garlic to crockpot.
- Cook on high for 2-3 hours, or low for 4-6+ hours
